Gelatin From Cartilage of Siberian Sturgeon (Acipenser baerii): Preparation, Characterization, and Protective Function on Ultraviolet-A-Injured Human Skin Fibroblasts

For full use of the by-products during Siberian sturgeon ( Acipenser baerii ) processing, gelatin was extracted from cartilages using hot water method, and its physico-chemical properties protective function on ultraviolet-A injured human skin fibroblasts (HFSBs) were measured. Using single-factor orthogonal experiments, conditions for extracting cartilage optimized as extraction time 7 h, pH 9, material-to-liquid ratio (g/ml) 1:5, temperature 45°C. The prepared (TCG) with a yield 28.8 ± 1.53% had Gly (307 residues/1,000 residues) major amino acid contained lower amount (214 imino acids than that (227 pigskin (PSG). Sodium dodecyl sulfate–polyacrylamide gel electrophoresis (SDS-PAGE), ultraviolet spectrum, infrared spectroscopy analysis indicated TCG main spectral characteristics fish α chains (α1 α2 chains) β chain type I collagen, but structural stability PSG due to low content acids, which induced smaller molecular bands observed in SDS-PAGE pattern. exhibited content, strength, emulsion index, foam capacity, stability, water-holding capacity higher ash transmittance, activity fat-binding P < 0.05).
